Acorn Squash stuffed with Bulgur and Tomato

A new recipe today. I actually make a variant of this quite often, but it’s usually rice and lentils, not bulgur. Anyway, this time I had bulgur lying around after making tabbouleh, and needed to use it up, so here it is. In essence, the filling is reverse tabbouleh. Normally, you’d probably do this with a ton of parsley, and a little bit of bulgur. I flipped it around this time.

Whole Wheat/Hemp Bread

I know it’s Christmas Eve, and I will have more to say about that at some point, but as my gift to everyone (ha!) here’s a recipe I use a lot to make bread. It’s easy, it can be heavily tweaked, and works well for me. It makes a very dense, chewy bread, but that’s how I like it. I bake small loaves, so the slices can be toasted and end up almost like a cracker.

Nyoyo

I’ll probably have more to say in a bit, especially with the fresh snow outside, but I’ve added a new recipe to the site. Nyoyo is a bean, corn and tomato dish from Kenya. It’s quite tasty, and has a (thankfully) simple spice list which makes it easy to cook because you don’t need to hunt for all sorts of exotic things. This can be made in a hurry and goes well with rice or bulgur wheat and a salad. Enjoy.

Musings, and an Ethiopian Potato Recipe

It has been a few days since I’ve really posted about anything, but I felt that there was enough new in my life that a post was warranted, so here it is. First, I have put up a new recipe, Alecha Wat, an Ethiopian vegetable stew that is quite popular with the Copts population, during Fast days when they are forbidden to eat meat. My version takes a few liberties with the ingredient list, but I think it turns out pretty well.

Work and play continue. I have finally replaced the drivetrain on my older mountain bike. That turned into a slog since Shimano changed the BCD from 94 to 110 the same year my Deore XT crank came out, so the Sugino Pro rings I had found were too large. I ended up scoring a sweet deal on an XTR crank that had a 110 BCD 5 arm spider that works really well. All installed. It’s nice to have a big ring to mash again.

I will be in Ottawa for a few days, next week and next weekend. I am looking forward to it. Santa has come early, and has brought me that most mystical of Time Lord paraphernalia.

Woot.

Quick Broccoli Soup

I made a batch of this tonight, and put the recipe up. It’s quick, healthy, and very fresh and light tasting. Obviously, you need to like broccoli. There are ways to “chef it up”, though, so read the recipe.

Aloo Gobi

I’ve added another recipe to the site. If you like sweet potatoes and cauliflower, you may like aloo gobi, an Indian dish that’s often served as a side dish to other things. I’ll often make it along with Mujaddara. Tasty!

Punjabi Chole recipe

I have promised this one for a while now, and finally put it up. Punjabi Chole is an Indian spicy chickpea dish that goes well with soups, roasted root veggies, and hot tea. Especially on cold days. I hope you like it.

Baba Ghanoush

I finally got off my butt and put up a recipe I’ve been wanting to do for a while. Baba Ghanoush is a simple eggplant dip that goes well with a lot of things, and is quite versatile. Enjoy.
